I am totally loving my weight loss journey with Weight Watchers Freestyle program. I started Super Bowl weekend, and I have lost 13 pounds so far. That means that I have been on the program approximately 16 weeks. With a weight loss averaging less than a pound a week – I am most definitely part of the turtle club. And that is OK with me! Like I said – I am enjoying the journey.
If you follow me on Instagram, you can tell that I have not slowed down on enjoying life at all. Yes, I am making healthier choices, but during this time my husband and I have enjoyed many dinners out, I have attended numerous celebrations and parties, I completely enjoyed Teachers’ Appreciation Week, and I still enjoy a glass of wine from time to time. Weight Watchers Freestyle Program is not a diet – it is a lifestyle.
Well, a few more friends have joined along this journey with me. We now fill up a complete row of seats at our Saturday morning meeting. The program is working for all of us, but one of my friends commented that she feels like her food has gotten boring – she is OK with that, she is losing weight – but this new style feels boring to her.
Really? Not in my kitchen! My food is full of flavor and completely delicious! One way we are adding more flavor to our dinners with zero Freestyle points is topping fish and chicken with this scrumptious mango salsa.
My Easy Mango Salsa – Freestyle Recipe is super easy! It only takes five ingredients. The hard part is not eating the whole bowl with a spoon!
Easy Mango Salsa – Freestyle Recipe
Ingredients
- 2 Mangoes, diced
- 1/2 red onion, diced
- one handful cilantro, chopped
- juice of one lime
- ginger juice, finger sized ginger root, grated and juice squeezed out
Directions
- Cut mangoes, dice and add to medium sized bowl
- Add in diced red onion, cilantro, and juice of one lime
- Peel and grate ginger root. With clean hands squeeze juice of ginger into the bowl and discard ginger pulp.
- Gently fold and ingredients together and refrigerate.
You can eat this right away, but I like to let it sit in the fridge a bit to allow time for all of the flavors to meld together.
