We all know that breakfast is the most important meal of the day. But if your mornings are like mine they are a bit busy. However there are easy ways to plan, prep, and work around your busy schedule to see that you and your family eat a nourishing and delicious breakfast.
It starts with planning and shopping. We work hard to make sure that we are feeding our family truly healthy foods. I walk the grocery store aisle reading labels – trying to decipher label information. I do load my shopping cart up with mostly food from the perimeter of the store: fresh fruits, vegetables, meats and proteins, milk, eggs, bread. But food labels are everywhere. Even on the items sitting the perimeter of the store, and most definitely on the items up and down the aisles. Food labels can be confusing!
I was happy to chat with Registered Dietitian Annessa Chumbley about how to make healthy choices before going to the grocery store, what to look for on food labels, what natural and organic foods can shoppers get the most value from, and – she shared some great recipes with me!
My family LOVED the apple oat waffles! Next time I do need to make up a double batch and freeze half.. With only six ingredients tossed into the blender it was fast to put together! The kids loved them topped with Greek yogurt, chopped apples, cinnamon, and a drizzle of maple syrup. So good!
Apple Oat Waffles Recipe
Ingredients:
- 1 O Organics egg
- 1 organic apple, such as Gala, cored and coarsely chopped with skin on
- 1/2 teaspoon O Organics® ground cinnamon
- 1/2 teaspoon kosher salt
- 1 cup O Organics® almond milk
- 2 cups whole oats
Optional Toppings: sliced apples, cinnamon, Greek yogurt or maple syrup.
Directions:
1. In a blender, add ingredients in order beginning with egg, apple, cinnamon, salt, almond milk, and oats. Blend until all ingredients are combined, stopping blender to stir ingredients if needed.
2. Brush waffle maker with coconut oil or nonstick spray. Use 1/3 cup batter per waffle. Cook until golden brown. Top as desired!
Prep time: 5 minutes, Total Time: 20 minutes, Serving size 2 waffles, Makes 6-7 waffles

Love waffles! Don’t have them often enough, but when I make them I definitely make a full batch and freeze them! I actually prefer the ones I make ahead and freeze as they have a little extra crunch to them!
