Blueberries – little round spheres of deliciousness. Oh, how I do love blueberries – in my muffins; with my oatmeal; as a topping to yogurt, ice cream, and pancakes. Pretty much any snack or breakfast can be made better by adding a spoonful (or more) of tasty, juicy blueberries! While I can pretty much get fresh blueberries any time of the year here in California, blueberries scream summertime to me. They are just better in the summertime and oh, so much more plentiful!
Yes, open my fridge anytime during the summer and you will most likely find a large container of fresh blueberries sitting on the shelf. My husband adds them to his morning yogurt, the kids turn them into smoothies, and I love them in my overnight oatmeal! And when I know I have company coming? All of the delicious blueberries are turned into the most amazing and extremely simple blueberry cobbler that you can find anywhere!
This recipe comes to me from my mom. It is one of her go to summer desserts and one that she made often at the lake. A bite of this blueberry cobbler warm from the oven or settled to room temperature takes me straight to my mom’s kitchen. Where after dinner we would all enjoy a bowl of this blueberry cobbler topped with ice cream sitting outside on the front porch of Mimi and Papa’s lake cabin. Sitting on the porch surrounded by family – looking out over the lake and most often watching the kids with their dessert down at the docks fishing – Yes, this is the best easy to enjoy this dessert. While my parents have sold their place, we still have so many wonderful memories of summertimes spent at the cabin. With a sunset time of 10 pm days are long at the lake – giving us all ample time to play in the water, spend time boating, reading in the hammock, fishing, and just running around playing with the cousins. Lake time with my family is a bit of heaven.
And this blueberry cobbler is a bit of heaven as well. Never-mind the fact that blueberries are an amazing fruit full of antioxidants, free-radical fighters, and said to help fight inflammation. Nope, never-mind all of the health benefits of blueberries – just look to these little spheres as the basis of an amazing, taste of summertime, dessert.
The recipe is called Extra Easy Blueberry Cobbler for a reason! It is so super-duper fast and easy to put together! And it calls for standard, I-already-have-that-in my-pantry, staples.
Extra Easy Blueberry Cobbler Recipe
INGREDIENTS:
4 Cups Fresh Blueberries
1 Tablespoon Fresh Lemon Juice
1 Cup Flour
1 Cup Sugar
1 Teaspoon Baking Powder
1 Egg, beaten
6 Tablespoons Butter, melted
1/4 teaspoon Cinnamon
1 Tablespoon Light Brown Sugar
DIRECTIONS:
Simply rinse blueberries, drain, place in bottom of 9 x 13 glass baking dish, and sprinkle with lemon juice.
Next mix next flour, sugar, baking powder, and egg with a fork until it resembles course cornmeal. There will be some lumps.
Distribute flour mixture over blueberries and drizzle top with butter.
Combine cinnamon and light brown sugar – sprinkle on top of cobbler.
Bake 40 − 45 minutes or until golden brown. Do not over bake! It is excellent served with vanilla ice cream, or fresh whipped cream as a topping. YUM! How easy was that?!?
