I first shared this recipe as part of Eight Healthy Afternoon Tea Snacks. They are perfect bite-sized snacks to help you get through that afternoon slump. Make up a batch and store them in the refrigerator. They only last a few days in my home, but I think they would keep for about a week.
I am resharing it here so that it is easier to find on the blog, plus you now get the printable version.
Almond Butter, Oatmeal, and Raisin Bites Recipe
Mix together the following dry ingredients in a small bowl:
- 1 1/2 cup rolled oats
- ¼ cup ground flax seed
- 1 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- dash salt
To this add:
- 2 teaspoons vanilla
- 2 tablespoons honey
- ½ cup almond butter
Mix together well – you are going to need to use your hands to knead it all together! If it is a bit too dry add a little more almond butter, if it is too moist add a little more oatmeal. Once you get the right consistency, Roll the mixture into balls. I roll and squish it together, making a small dense bite-sized ball.
