Glazed Pork Tenderloin with Pineapple Recipe

This recipe is simply delicious! This fast, easy-to-put together weeknight dinner is scrumptious and so beautiful on the platter – it is definitely fancy enough to serve for company!

But the best part – beyond delicious and easy – is that it is a low WW point meal! I served it with a side of edamame and Jasmine rice. I opted for the rice because I had the points available, and I wanted the rice to help soak up the juices; however, the side of Jasmine rice could be swapped out for the riced cauliflower for an even lower WW point meal.

Glazed Pork Tenderloin with Pineapple Recipe

Ingredients

  • 4 slices (each 1/2 inch thick) fresh pineapples
  • 3 tablespoons Dynasty dark hoisin sauce
  • 2 teaspoons grated peeled ginger
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1 1/2 pounds pork tenderloin, trimmed
  • Salt and pepper to taste
  • Quick Ginger Sauce (recipe below)

Directions

  1. Heat the broiler. Place the pineapple slices on a foil-lined baking sheet.
  2. Combine the hoisin sauce, ginger, garlic, and mustard in a small bowl.
  3. Place the pork on a broiler pan fitted with a rack. Liberally season the pork with salt and pepper, then brush the pork with the hoisin mixture.
  4. Place the pork 4 inches from the heat source (My broiler is in my oven, and I place the pork on the top rack.) Place the pineapple on the shelf below.
  5. Broil the pork until it registers 145 degrees (medium rare) to 155 degrees (medium) on an instant read thermometer. Approximately 15 – 20 minutes.
  6. Remove from the broiler and let sit for five minutes – the internal temperature will continue to rise and cook the pork as it sits.
  7. Turn the pineapple slices and move closer to the broiler. Keep on eye on the pineapple and broil for a few more minutes until it is the golden brown that you desire.
  8. Slice pork and serve with drizzled Quick Ginger Sauce and sliced pineapple.

Quick Ginger Sauce

Ingredients

  • 2 tablespoons dark hoisin sauce
  • 2 tablespoons pineapple juice (from your fresh pineapple)
  • 1 teaspoons grated peeled fresh ginger
  • 1 teaspoon soy sauce
  • fresh ground pepper

Directions

  1. In a small bowl, mix together the hoisin sauce, pineapple juice, ginger, and soy sauce.
  2. Season with pepper.

This whole meal was is seven WW points! The meal prepared for four servings is only four points for the glazed pork and pineapple. Simply add the edamame for zero points and 1/2 cup of Jasmine rice for three points. Again – if you want even lower points opt for riced cauliflower. That is a staple in our home.

Simply delicious, easy, fast, and low points – what more is there to ask for???

Well, how about baked chicken?

I enjoyed the flavors of this marinade (hoisin sauce, ginger, garlic and Dijon) so much that I whipped up a second batch (a week later) and tossed it on some boneless, skinless, chicken breast – popped those babies into the oven for 25 minutes at 350 degrees and had some scrumptious, moist chicken thighs for dinner! Served with a side of steamed zucchini topped with Trader Joe’s Everything But The Bagel seasoning and the remaining packet of frozen Jasmine rice. Two takes on the same flavor profile! With everything in the house it was a super fast dinner to put together. Double Yum!!

I could not find my broiler pan, I have no idea how it went missing, so I had to makeshift a pan by using a baking pan and rack. I am now the happy owner of the new broiling pan listed below!
