Not only is this recipe the fastest Tuesday Tacos ever, they are delicious, plant-rich, and full of flavor! Starting with pre-seasoned tofu and a pre-shredded coleslaw mix is what helps make these tacos so fast and easy to put together. Simply add tortillas, salsa, a bit of yogurt (if you want a fully plant-based meal, then use your favorite plant-based yogurt), and sliced jalapeños to put together these delicious tacos. And honestly, these tacos are good any night of the week – not just on Tuesdays 🙂

Fastest Tuesday Tofu Tacos Ever

Ingredients

  • Trader Joe’s Sriracha Baked Tofu (7oz. package)
  • Your favorite street taco tortillas (I love LaTortilla’s Hatch Green Chili, White Corn and Wheat tortillas)
  • 2 cups shredded tricolor coleslaw mix
  • 1 tablespoon yogurt
  • 4 tablespoons salsa plus more for topping
  • Sliced jalapeños
  • A spitz of avocado or olive oil

Directions

  1. Preheat skillet over medium heat. Spray warmed pan with the avocado oil.
  2. Slice the tofu into strips and place into the heated skillet. While the tofu is getting crispy prep the coleslaw.
  3. In a medium bowl, mix the yogurt and salsa together. And in the shredded cabbage and toss to coat.
  4. Check tofu and and if the underside is golden, go ahead and turn to get the second side crisped. Continue turning as needed to fully crisp both sides.
  5. Slice jalapeños (remove seeds if you want a little bit less of a bite.)
  6. Heat tortillas in a heated pan or in the microwave (wrapped in a paper towel)
  7. Ready tacos – top a warmed tortilla with the coleslaw mixture, strips of sriracha tofu, sliced jalapeños, and another spoonful of salsa.

Seriously? How easy was that? Of course you can always feel free to add more toppings – black beans, avocado, tomato, sour cream – whatever you want. I like to keep it simple as I love the flavor of the sriracha baked tofu balanced with the coleslaw dressing of salsa and yogurt. I love the crunch of the slaw, the crispness of the tofu, and the softness of the tortilla. All in all – my taste buds enjoy a happy dance of flavors and textures with my fastest Tuesday tofu tacos ever!

    I’ve been trying to eat more plant based and this looks delicious. The TJ’s creamy cashew yogurt is also very good for those who want non-dairy.

      I have not tied TJ’s cashew yogurt yet. I will need to give it a try. I do like my Greek yogurt, and have had a hard time trying to find a plant-based yogurt that I enjoy. The one I used in the recipe is the brand my husband enjoys the most – so it was easy to grab from the fridge. Thanks for the tip!
