Congo Bars are a yummy, gooey, chewy, buttery, brown sugar, chocolate delight! Really they are a just plain crazy good! The first time I enjoyed one of these bars was in class when one of my students showed the us how to make Congo Bars as part of his “How To” speech in my Speech and Debate class. I think he was working for an A+ with the taste of these bars as he passed a platter of Congo Bars to all of his classmates and me.
In front of the class, my student showed us how very easy it was to combine the ingredients, spread the batter into a prepared pan, place the pan into an imaginary oven (a desk set to the side) and simultaneously remove the fully baked pan. Perfectly timed to fit the five minute time requirement for his “How To” speech.
Not only did my student do a great job with his demonstration and instructions, the students and I fell in love with the Congo Bars! They really are so yummy! A perfect dessert to bake up and share with family and friends for picnics, tailgating parties, barbecues, and any fun gathering. They are easy and the recipe makes a large platter with plenty of squares to share. This is a dessert that adults and kids cannot seem to get enough of!
Congo Bars Recipe
INGREDIENTS
- 2/3 cup butter, softened
- 2 1/2 cups brown sugar
- 3 eggs
- 1/2 teaspoon vanilla
- 2 2/3 cups flour
- 1/2 teaspoon salt
- 2 1/2 teaspoon baking powder
- 1 bag chocolate chips
DIRECTIONS
- Cream butter and brown sugar in a large mixing bowl
- Stir in 1 egg at a time, until well blended
- Add vanilla and mix
- In a sperate bowl, sift together flour, salt, and baking powder
- Add flour mixture to batter in small batches, fully mixing
- Stir in chocolate chips
- Spread batter evenly in a 10x15x2 inch pan
- Bake at 325 degrees for 40 − 45 minutes
- Slightly underbake for an extra chewy bar!
Golden brown, chewy goodness! As you can see it makes up a huge platter ready to serve at your next gathering! And so easy a middle school student can make these!
