What does it say that my first blog post after my last day teaching this school year is a summer cocktail?!? I guess I am ready for summer! Actually, if you follow me on Instagram, you saw my picture from Rocky Point Restaurant a couple of weekends ago.
Since my school year goes through second week of June, I like to get a jump start on summer. Yes I know, the official start of summer is next week, but unofficially isn’t Memorial Day the beginning? Whatever, I am soooo ready to enjoy unstructured time and warm, sunny days.
So lets cheer in summer with this Ginger Pineapple Summer Cocktail Recipe that I totally enjoyed at Rocky Point Restaurant. While I cannot recreate the wondrous view of the Pacific Ocean, I can recreate this scrumptious and refreshing cocktail. A cocktail that is perfect for summer. It is a little bit sweet and a little bit tangy and a whole lot of ginger. I love the taste and bite of fresh ginger – so for me this is perfect!
Ginger Pineapple Summer Cocktail Recipe
Ingredients
- 1.5 oz. Bacardi
- 2 Sprigs mint
- Chopped fresh ginger (1-2 teaspoons worth)
- .5oz Ginger Syrup
- 3 oz. Pineapple juice
- 1 splash lime juice
- 1 Splash Licor 43 ( a Spanish liqueur)
- Lime slice for garnish
Directions
In a water glass pour all ingredients over ice. Shake like crazy to combine and break up mint. Enjoy!
If you are in the area or are planning a trip to the Monterey coast be sure to stop at Rocky Point Restaurant. You cannot beat the view. The drink and food is yummy, but the view is unbelievable.

What a lovely setting to enjoy this cocktail. I must try this…I love pineapple and ginger but have never tried them together!
