I have found that one of the best ways to get my children to eat healthy is to get them involved in the kitchen. From menu planning and grocery shopping, to chopping, stirring, and measuring – my kids have always been a part of the “getting the food on the table” process.
As a mom, my kids were always with me when they were tiny. Grocery shopping with three littles under the age of five was how I shopped. Opening the panty door and letting my toddler son build with the canned goods, gave me time to prep dinner. Eventually they became my little helpers. The easy bake oven was a hit until my daughter learned the power of the kitchen oven. My kids have never looked back. All of them are adventurous in the kitchen and love whipping up their own specialties.
Last summer Sophia, our youngest, mastered a few more recipes. Sophia’s Awesome Super Stew was a huge hit and her Carnival Rice has become a weekly staple! Carnival Rice is so simple and all the kids love it! I love that it is healthy and the kids can whip it up on their own. Carnival Rice is a flavorful mix of Uncle Ben’s Ready Rice, vegetables, chicken, and a few fresh toppings. It only takes minutes to put together which makes it a perfect protein-packed afternoon snack or lunch. In fact, the kids and I all love to pack this for lunch. Carnival Rice Recipe
Ingredients
- 2 Packages of Uncle Ben’s Ready Rice (We love mixing Quinoa & Brown Rice with Garlic and Brown, Red & Black Rice)
- 1 Can Black Beans
- 1 Can Corn
- Chopped Chicken
- Sliced Avocado
- Chopped Tomato
- Chopped Cilantro
- Salt and Pepper to taste
Directions
- Heat two packages of Uncle Ben’s Rice in microwave. Follow directions on the package. This takes just 90 seconds per package! Mix together in bowl.
- Rinse corn and black beans under cool water. Add corn and bean to rice mixture.
- Chop chicken into bite size pieces. Add chicken to rice mixture.
- Sprinkle with salt and pepper. Gently fold all ingredients together.
- Microwave all for 90 more seconds.
- Top with chopped tomato, sliced avocado and a sprinkling of chopped cilantro.
- Enjoy!
Uncle Ben’s gets how busy family life can be. They also understand how many good things come from getting kids in the kitchen. I know my children all beam with pride when they present a meal that they have helped prepare. Cooking together is educational and fun!

I am seriously drooling over this recipe, It looks and sounds so tasty. I used to love cooking with my children when they were growing up, and now I’m doing the same with my grandchildren. Not only is it fun, but it teaches them important life skills.

I love having the girls with me in the kitchen. They are small now but I throw them into one of my old t shirts and pull their hair back and we make all kinds of things. t’s so lovely to see you with your daughter.
