Ah,  I love summer! I’m starting to finally feel like summer has hit. A big part of that is that I just hosted my annual Ladies’ Pool Party. This is my annual kick-off to summer. There is no doubt about it – when I can float in the pool during the middle of the week, summer is actually here! Yes, this is part of being a teacher. I do get some summer down time.

We were trying to think about how many years I have been hosting my Ladies’ Pool Parties. They have been going on for at least a dozen years. It is a wonderful summer tradition!

Like most years, I added jello shots to the menu. I think jello shots are a perfect complement to a ladies’ only pool party! We do not need to worry about kids getting their hands on them – no kids are allowed. And simply put, they are fun. They are reminiscent of summer days gone by, just a grown up version. My Sliced Watermelon Jello Shots are also a fan favorite!

Since the Fourth of July is just around the corner I made Red, White, and Blue Jello Shots this year. Layering the jello colors takes a bit more time. It is a 2 step jello shot recipe, but the layered colors are tasty and fun. I have started adding fruit to my jello shots more and more because that is what my friends like the best. Strawberry Filled Red, White, and Blue Jello Shots Recipe

You will find diced strawberries in the bottom of these cups of jello. Double yum! The addition of whipped cream makes it a creamy dessert bite with a kick.

To make 30 mini cups of Red, White, and Blue Jello Shots

Ingredients

  • 8 Strawberries diced
  • 1 package (3 oz.) Strawberry Jello
  • 2 packages (3 oz.) Berry Blue Jello
  • Whipped topping
  • Blueberries for garnish
  • 3 cups boiling water
  • 1-1/2 cups vodka
  • cold water
  • 2 0z. mini cups

Directions

To make the red layer:

  1. Pour 1/2 cup of vodka into a one cup measuring cup. Add water to make 1 cup total. Place cup in the fridge to chill.
  2. Boil cup of water – I use my tea kettle so I can easily boil more and pour into the measuring cup.
  3. Dice strawberries into small pieces and place a few into each 2 oz. cup.  
  4. Empty jello powder into a large mixing bowl and add one cup of boiling water.
  5. Stir continuously until the jello is completely dissolved. About 2 minutes.
  6. Add cup of cold vodka and water.
  7. Stir until mixed and pour  into 2 oz. cups filled 1/2 of the way.
  8. Refrigerate until firm.  

To make the blue layer:

  • Pour 1 cup of vodka into a one cup measuring cup. Add water to make 2 cups total. Place cup in the fridge to chill.
  • Boil 2 cups of water – I use my tea kettle.
  • Empty 2 packages of jello powder into a large mixing bowl and add 2 cups of boiling water.
  • Stir continuously until the jello is completely dissolved. About 2 minutes.
  • Add 2 cups of cold vodka and water.
  • Stir until mixed and pour  on top of the red layer of jello. If the red layer is not totally set, the strawberries will float to the top. No worries – it is all yummy. You just don’t want the colors to mix. You will have some blue jello left over – just put it in the fridge.
  • Refrigerate until firm.  

To serve:

Remove from refrigerator, top with whipped cream and a couple of blueberries. Serve immediately. These will melt in the sun, so keep in a cooler or the fridge until time to serve.
