My stepson just returned home from a service trip to Mexico. To celebrate his return I thought it would be fun to throw together a quick and easy Mexican fiesta for dinner. What better way is there to greet his return then enjoy a relaxing dinner while we got to hear all about his trip?!
The menu was simple! It was a mix of homemade delights and easy from the grocer freezer Delimex family favorites. Whether you are hosting an at home Cinco de Mayo Happy Hour or just in the mood for some easy Mexican fare – Delimex helps you pull it all together!
An Easy Mexican Fiesta Dinner Menu with Delimex
- Delimex Chicken Taquitos topped with Guacamole Sauce
- Delimex Beef Tamales topped with Chili and Cheese
- Confetti Mexican Rice (recipe below)

- Southwestern Salad
- Chips and Salsa
- Sliced Avocado

This family meal was extra fun! Maybe it was the festive and bright colors. Maybe it was the fact that the kids got to have soda with dinner. Or maybe it was because we got to hear all about Dominick’s experience working with the children of IPODERAC and of his work sealing roofs and providing road maintenance around the campus.
I suppose it was because all of the above and the fact that pulling together a Mexican Fiesta on a weeknight was easy! Cinco de Mayo is right around the corner and this year it will fall on a Tuesday. Another weeknight. That means that I will be heading back to Walmart where I know I can find an assortment of Delimex taquitos, tacos, and tamales to help me pull together another Mexican fiesta for our at home Cinco de Mayo Happy Hour!
Mexican Confetti Rice Recipe
INGREDIENTS
- Box of favorite Mexican Style Rice
- 1 tablespoon butter
- Half yellow onion – diced
- Half red bell pepper – diced
- Can yellow corn – rinsed and drained
- Can black beans – rinsed and drained
DIRECTIONS
- Prepare Mexican Rice according to package
- Heat butter in large skillet over medium heat
- Sauté diced onion in butter until soft and translucent – about 4 minutes
- Add diced red bell paper and cook for another 3 minutes
- Add corn and black beans to onion mixture. Stir together and heat throughly.
- Add to prepared rice and serve.
Delimex Beef Tamales Topped with Chili
Delimex tamales are easy! Just pop them in the microwave to heat. They can be served straight from the husk or dressed up a bit. I like to dress mine up with a topping of heated chili and a sprinkle of shredded cheddar cheese. So yummy!
Delimex Chicken Taquitos topped with Guacamole Sauce
My kids love to have these taquitos for snacks. It is something they can prepare themselves whenever they feel the craving. For dinner, like the tamales, I like to dress them up a bit. I simply layer the hot taquitos on a bed of shredded lettuce and drizzle them with guacamole sauce. To make the guacamole sauce I simply put a scoop of guacamole into a ziploc bag and add in a scoop of sour cream. I then seal the bag and smoosh the two together until they are well mixed. Next, I snip off a corner of the bag with a pair of scissors and then use the bag to help me pipe on the guacamole sauce. I then top it all with diced red bell peppers and sliced black olives. Pretty huh? And so easy! Yep Delimex from my local Walmart made my Mexican fiesta on a weeknight a possibility!
