30 minutes and this delicious dinner was on the ta

30 minutes and this delicious dinner was on the table! I didn’t get home till after 6:00 (yes, teachers work past 3:00), and I was sitting at the dinner table enjoying this veggie fried farro dish by 6:45. Delicious and fast! 💚

I started by cooking the farro, then chopping my Farmers’ Market produce and sautéing it in some olive oil: baby onions, lots of garlic, bell peppers (red, yellow, and purple 💜), and chopped broccolini.

Made a sauce of soy sauce, lime juice, grated fresh ginger, red pepper flakes, pepper, and a bit of maple syrup.

Added cooked farro to veggies, stirred in sauce, and cooked till done.

Topped with green scallions and sesame seeds.

It was that easy and fast!The farro gives this a denser and chewier bite than rice. Plus as a whole grain, it has much more protein, fiber, and other nutrients than rice.

A great way to use an assortment of veggies!
