Taco Seasoning for a Fresh and Delicious Taco Salad

One of my go-to weeknight dinners is a fresh and delicious taco salad. I make this up often since it is yummy, healthy, fast, and everyone in the family loves it! For years I used to keep the store bought packets of taco seasonings on hand, and then I discovered how easy it was able to make up my own taco seasoning.

Funny to think about, taco meat was one of my very first recipes that I ever learned how to make. When I as in middle school, I took a cooking class and tacos were on the menu! I am sure we must have used a mixture of seasonings, but apparently that recipe did not stick.

My family likes a little nip, this seasoning mixture is not spicy at all – it is nice and flavorful. If you like a little less nip, decrease the black pepper.

Taco Seasoning for a Fresh and Delicious Taco Salad

  • 1 Tbsp. Chili Powder
  • 1 1/2 tsp. Ground Cumin
  • 1 tsp. Sea Salt
  • 1 tsp. Black Pepper
  • 1/2 tsp. Paprika
  • 1/4 tsp. Garlic Powder
  • 1/4 tsp. Onion Powder
  • 1/4 tsp. Crushed Red Pepper Flakes
  • 1/4 tsp. Dried Oregano

Taco Salad

  • 1 1/2 – 2 pounds ground hamburger. Go for the leanest! We purchase a hand grown, family farm raised side of beef, so our freezer is filled with lean meat.
  • Taco Seasonings (recipe above)
  • Can low-sodium black beans
  • Can corn

Taco Salad Fixings

  • Iceberg Lettuce
  • Mixed Salad Greens
  • Shredded Cheese
  • Sliced Avocados
  • Sliced Tomatoes
  • Salsa
  • Tortilla Chips (optional)

Directions

  1. Mix up seasonings into a bowl and mix well. This recipe is for one dinner. I usually use this amount for 1 1/2 – 2 pounds of meat.
  2. Brown ground beef.    
  3. Drain any oil.
  4. Sprinkle in seasonings and well mix.
  5. Add corn and black beans – mix well.  
  6. Heat until warmed all the way through.
  7. Place lettuce greens into individual bowls.
  8. Top with taco meat.
  9. Add toppings of choice.

I set up a taco salad bar, and my family walks through making up their own bowls of taco salads before we sit down at the dinner table. Everyone enjoys creating their own and personalizing it to their tastes. It is easy to switch this up to a taco bar by adding tortillas and taco shells. This makes a great meal for a kids’ sleepover. I have set up taco bars for lots of pool parties and sleepovers. Kids of all ages like this meal, and it is easy to double or triple as needed.

For those of you that are counting Weight Watcher’s Freestyle Points like I am, my delicious and filling salad was only eight points!

  • 3/4 cup 90% lean ground beef – 4 points
  • 1/2 cup Sargento Off the Block Reduced Fat Four Cheese Mexican – 3 points
  • 2 slices avocado – 1 point
  • Corn: free
  • Black beans: free
  • Lettuce: free
  • tomato: free
  • Pace Salsa: free

Simply amazing! Totally delicious, filling and low points! Plus this is a dinner that everyone in the family will enjoy – not just those counting Freestyle Points.
