Easiest Ever Overnight Oatmeal with Blueberries

Right now I am having a craving for my Easiest Ever Overnight Oatmeal with Blueberries! Seriously.

I have been on an outstanding road trip for the past few weeks. Which is why my blogging has been rather sporadic during this time. This little thing called, “No Service” when we are traveling through National Parks and the wide open prairie of the midwest just gets in the way of me sharing my world with you. Plus the fact that I am simply soaking in all of the beautiful landscapes that make up our amazing country.  There is no doubt about it – the USA is gorgeous!

Living out of a suitcase for over three weeks – sleeping in various hotels, cabins, and with family has been a blast, but I am starting to long for a few of my daily routines from my non-traveling life. One routine that I am looking forward to getting back to is meal prep. Eating out and trying the local cuisine of the many states that we have traveled through has been a culinary delight: trout, bison, elk, huckleberry, and rhubarb martinis are all yummy

We have worked hard to maintain a healthy diet while on the road. I have been impressed with many of the free breakfast options that we had access to, but nothing beats a sound meal prep plan. This next week I will be back to prepping my meals – especially as I will also be back to work in the classroom. Yes, summer is quickly coming to an end for me!

First up on the order is my Easiest Ever Overnight Oatmeal with Blueberries! While I do love my other recipe for Overnight Oatmeal with Blueberries and Chia Seeds Recipe, this easier version has become my go-to for overnight oats. With only four ingredients it is super fast to put together, load into jars, and toss into the fridge for four days worth of breakfasts. Or in my home – two days as other family members love them and grab them to eat as well.

Easiest Ever Overnight Oatmeal with Blueberries

Ingredients

  • 32 oz plain yogurt
  • 1/2 cup chia seeds
  • 4 cups blueberries
  • 2 cups oatmeal

Directions

  1. Combine all ingredients in a large mixing bowl. Reserve a few blueberries for the top.
  2. Stir until well combined and chia seeds are fully disbursed. 
  3. Place into 4 – 6 sealable jars. This depends on your serving size. I make my hubby’s larger than mine.
  4. Top with fresh blueberries and seal jars.  
  5. Place in refrigerator overnight. Can be stored in fridge for four days.
  6. Enjoy!  

As I have said – these really are my go-to overnight oats. With only four ingredients they are just so easy and fast to put together. They are not as sweet and they have a thicker consistency than my Overnight Oatmeal with Blueberries and Chia Seeds Recipe.  So if you like sweeter and a thinner consistency than stick with my older version made with honey and almond milk. But if you like a bit of tangy and fast – try out this newer version. I love it!

This weekend will have me back in the kitchen meal prepping! I will most definitely be making these Easiest Ever Overnight Oatmeal with Blueberries as well as my Make-Ahead Veggie Egg “Muffins” Recipe for a week’s worth of healthy breakfasts.
