My newest comfort food! This hummus bowl is full o

My newest comfort food! This hummus bowl is full of all kinds of goodness - hummus, spinach, arugula, romaine, white rice, lentils, chicken, diced cucumbers, olives. Fennel apple slaw, pickled beets, quinoa tabouli, pita crunch, lemon and topped with a squeeze mint tzatziki! 🥗

Total comfort food! Half the bowl was enjoyed right away for dinner and the second half was enjoyed straight from the fridge the next day for breakfast. Delicious either way! 😋

My daughter and I went to Hummums Bowls & Wraps in Henderson, NV for lunch this past weekend. This place would be a standard go-to if I only lived closer. So now, I am going to have to re-create this scrumptious meal in my own home.

Moving day with a high of 115 degree weather was hot! 🔥

The good news was that by sticking with it, and not thinking too far ahead we got everything moved from my daughter’s shared home to her (second floor) own apartment.

I’ve always believed that when you are faced with a huge task, you think about it in smaller chunks. You can do anything for 15 minutes at a time. Or, In yesterday’s case, one load at a time. Every time I looked at that outdoor, baking-in-the-sun staircase, I thought, “OK, one more load.”

Eventually that giant task of moving was conquered. Whatever huge task, goal, or hardship you are facing, you can conquer it as well. Take it one step, one chunk at a time.

Consistency and persistence will get you there! 💪

Today I'll be driving to Vegas (112 degrees!) to help my daughter move apartments. As she starts her third year of medical school, she is ready to live without roommates. Life keeps moving forward! I look at my children and marvel at how they keep growing and building their lives. As it should be. 💛

I do know that once you get in the rhythm, marching forward takes on a life of its own. As you look at your long-term goals, break them up into shorter chunks. Give yourself a timeline, and write out daily tasks that will get you there. 📆

Your daily task list is your success list! 👊🏼

Every completed success list is progress that will build momentum. That momentum then fuels your success. It is a powerful cycle. ♻️

Today is your starting point. Once you get the ball rolling, it will roll so much easier. 💪🏼

What’s for dinner? 🌮

The answer is often tacos or taco salad! This is such a mainstay dinner in our home. I make a batch of taco seasoning so I always have some ready to go.

Super Easy! 🌮😋👍

Taco Seasoning Recipe:

1 Tbsp. Chili Powder
1 1/2 tsp. Ground Cumin
1 tsp. Sea Salt
1 tsp. Black Pepper
1/2 tsp. Paprika
1/4 tsp. Garlic Powder
1/4 tsp. Onion Powder
1/4 tsp. Crushed Red Pepper Flakes
1/4 tsp. Dried Oregano

Hiking to the top of Half Dome in Yosemite National Park took a whole lot of grit! 🏞

Grit is the essence of moving yourself forward when the road gets bumpy. And believe me that trail had many bumpy spots. 🥾

Grit - the blending of passion and perseverance is the best indicator of success. 💪 If you want to reach a goal, you need to develop grit.

And the good thing is we can all learn how! I teach how to develop grit as part of my follow through plan in Moving Forward. There are three building blocks that need to be tackled to get gritty 😀

✅ Keep your energy high
✅ Keep your motivation engaged
✅ Build stamina

Master these blocks and you will be getting yourself gritty and reaching your goals!

Standing on top of that mountain, after all the hard work it took me get there: months of training and hiking long distances; dealing with blisters; all kinds of weather; and plenty of sore muscles, was exhilarating! Want to learn more about my follow trough formula? Drop me a DM.
