I am Loving my Green Smoothies

I recently bought a Nutribullet from Target – Thanks to the many gift cards I received from my students. I only wish I had owned one of these sooner!  This machine is amazing! It quickly and throughly blends fruits and vegetables into a perfectly smooth drink – appropriately called a smoothie :)I have been experimenting with different combinations of greens and fruits.  This recipe is my favorite so far.

Stacey’s Favorite Green Smoothie

2 cups organic mixed greens (Spinach, Chard, Kale in equal amounts)
1/2 cup frozen organic mango
1/2 cup frozen pineapple
1 small banana
piece of peeled ginger – about 1/2 inch piece of root (equal to about 2 teaspoons)
2 teaspoons of flax seed
Add water to max line and blend.

I also buy and use fresh pineapple and mango, but the frozen is really fast and easy. I also like the way it makes the smoothie nice and cold. Yum!

This recipe makes two nice sized servings! My best guess is that the calorie count for both servings together is roughly 230 calories.  I do not think you can get many more nutrients for only 115 calories!  And to top it off – it is delicious!

They are so delicious that I get daily requests from the family to please make them one too.  That is another reason I have started using the frozen cut up fruit.  I have tried all kinds of fruit and green combinations – apples, pears, berries, and almonds work really well as well.  I have packed smoothies in Sophia’s lunch box.  I simply place an ice cube in the reusable and packable mug, and it stays fine in her lunch bag until she enjoys it at lunchtime.

Enjoy!
