In the spirit of eating healthy and losing weight, I am looking for ways to prep my lunches on Sunday and have them ready to go for the week.  As a teacher at a rural school, I do not have easy access for a quick lunch off campus. My mornings and week nights are busy! If I want to eat healthy I need to take the time to plan and prep.

The answer – these super easy salads in a jar! I have come to love my salads in a jar. It is so easy to make up a variety of salads in one easy prep period for myself and my family. And look how pretty they are – yes, that is important. I love my food to also be visually appealing in addition to tasting great! Plus with the salad being stored in the glass in the refrigerator – they stay cold and crisp!

These are super easy to personalize as well. My husband’s salads always get more protein than I put in mine.

This roast beef salad in a jar is one of my favorite recipes for lunch. The heartiness of the garbanzo beans with the roast beef is a perfectly delicious and filling lunchtime salad.

Ingredients

  • 1 Tablespoon Light balsamic salad dressing
  • 1/2 cup cherry tomatoes sliced in half
  • 1/2 cup garbanzo beans
  • 1/2 cup shredded carrots
  • 3 oz. sliced deli roast beef
  • 1 cup chopped lettuce

Directions

  1. Layer the above ingredients into a large mason jar in the order listed.
  2. Starting with the salad dressing and ending with the lettuce.
  3. Seal jar and keep stored in the refrigerator. Can safely be stored for up to five days.

I usually make four salads on Sunday; one each for Monday, Tuesday, Wednesday, and Thursday. Friday lunch will be some sort of leftovers from dinner the night before. There are so many ways to vary the salad in a jar recipe. Another favorite of mine is a Niçoise Salad in a Jar.
