This Blue Cheese Topped Sirloin recipe is beyond delicious! I made this the other night and I really had no intention of turning it into a blog post, so I have just a couple of pictures. But because it is soooooo yummy I had to share it. Plus this blog is also my personal recipe box. You have no idea how many times I am pulling up my own recipes on my phone while I am standing in the grocery store making sure that I have everything that I need.

So today’s recipe is as much for myself as it is for you 🙂

I just had four days off work  – last Thursday was my Friday night. But my typical Friday night has me heading to bed early. Seriously early – by Friday night I am wiped out! Thursday though, was a whole new story, and I decided that I wanted to make a date night dinner for the family. Something extra special.

My husband has been working some serious hours – even once he is home he is taking phone calls and scrolling code on his computer. So in thinking of his favorite tastes: steak and blue cheese, I put together this super quick meal that highlights both of his two favorites!

Blue Cheese Topped Sirloin Recipe

A quick stop at the grocery store on the way home from work was all it took. The recipe is quick to put together, the steak does need time to marinate – at least 30 minutes, but since my hubby works later than I do, that was no problem. Plus it gave me time to set the table with a table cloth, candles, and open a bottle of red wine. This was a special night after all.

Blue Cheese Topped Sirloin Recipe

Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon dried Italian seasonings
  • 1 teaspoon pepper
  • 1/4 teaspoon salt
  • 4 top sirloin steaks (1 inch thick)

Blue Cheese Butter

  • 1/4 cup crumbled blue cheese
  • 3 tablespoons butter, softened
  • 1 tablespoon minced fresh chives
  • 1/8 teaspoon pepper

Directions

  1. In a large resealable plastic bag, combine the the olive oil, red wine vinegar, minced garlic, Italian seasonings, salt and pepper.  Add beef and coat throughly with marinade. Seal plastic bag removing as much air as possible. Refrigerate for at least 30 minutes.
  2. In a small bowl, mix blue cheese, butter, chives and pepper; set aside.
  3. Remove beef from refrigerator. Drain beef, discarding marinade.
  4. Heat a cast iron pan on medium high – when pan is hot, cook steaks 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°; well-done, 170°).
  5. Remove steak and allow to set for five minutes. Top with blue cheese butter before serving.

I served this steak with thick slices of toasted artisan bread (perfect for soaking up the juices) and a green salad filled with cherry tomatoes, chopped walnuts, blue cheese, and a creamy balsamic vinaigrette. Yes, this was a date night worthy dinner. As a family – we all enjoyed the extra special dinner on a Thursday night. In fact after a conversation filled meal we all finished the night with dancing in the family room! Just imagine what life would be like if I had every Friday off!
