Savory Beef and Veggie Hand Pies

I have been making savory beef and veggie hand pies for years. They are the perfect portable and handheld dinner! First, I am all about sitting down to the table as a family for dinner. That is something that we strive for every single night. But truth be told, for years we spent dinner time at one sports field or another.

Yep, springtime meant hours upon hours upon hours sitting sideline cheering on my children.

So how does a mom feed her family when she works all day, shuttles kids to and fro all afternoon, and then sits in a lawn chair baseline, grading papers, all the while cheering on the young players straight through the dinner hour? Whatever that hour may be.

Savory Beef and Veggie Hand Pies

Well, I started packing hand pies for dinner! They are easy to put together, and because you put them together, you know exactly what is going into the meal. That is important! Plus they are soooo easy to transport, and the the kids love them!

The kids are hungry right after the game – or between games given the number of siblings that were playing. Rather than resorting to the drive-thru or the sugar snacks that were handed out post game to the players, I would pack of cooler with foil wrapped hand pies (along with a thermal pack), and they were ready to enjoy during or immediately following the games.

This made this kids happy, and I felt good about what my children were eating for dinner when we were not able to sit down to the dinner table.

It was savory beef and veggie hand pies to the rescue! And while this beef and veggie mixture is what I most often made up – you can make a number of different fillings. I found that left over chicken and broccoli worked equally well.

Savory Beef and Veggie Hand Pies Recipe

Savory Beef and Veggie Hand Pies

Ingredients

  • 1 pound hamburger
  • 1 medium russet potato
  • 1 yellow onion, diced
  • 5 Mushrooms, chopped
  • 1 cup corn
  • 3 small carrots, diced
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • salt and pepper to taste
  • Roll refrigerated pizza dough
  • 1 egg, whipped

Directions

  1. Preheat oven according to pizza dough directions (425 degrees).
  2. Boil water and add russet potato, cut into quarters.
  3. Add olive oil to sauté pan over medium heat.
  4. Add onions and sauté for 3 minutes.
  5. Add diced carrots, sauté for 3 minutes.Beef and Veggie Hand Pies
  6. Add mushrooms and oregano, sauté for 2 minutes.
  7. Add hamburger and brown.
  8. Drain oil.Beef and Veggie Hand Pies
  9. Remove potato from water and remove skin. Dice.
  10. Add potato to hamburger mixture.
  11. Season generously with salt and pepper to taste.
  12. Dust cutting board with cornmeal and roll out pizza dough. Cut into six equal rectangles.Beef and Veggie Hand Pies
  13. Add large spoonful of hamburger to each dough. Fold dough over and pinch up and over three edges to close.Beef and Veggie Hand Pies
  14. Lightly coat each hand pie with egg.Beef and Veggie Hand Pies
  15. Bake at 425 degrees for 9 – 12 minutes or until golden brown.Savory Beef and Veggie Hand Pies

Like I said, there are so many ways to fill a hand pie. This recipe often gets dressed up with spinach or topped with cheese – you name it. This is one of those recipes that works with whatever you have in the fridge.

And my ball players? They played for years!

  18. I remember the days of sitting at events for hours and hours. I loved each and every minute of it, but was always glad to have something planned for dinner at home.
