Can you believe that it is October already?! It seems like school just started, and we have all just survived back-to-school shopping! Well, I finally got around to swapping out my summer mantle decorations for the fall decor. Yes, I am a bit late 🙂 This meant getting my autumn boxes down from the high shelf in the garage – and sorting through the Halloween and Thanksgiving ornamentations.

Which got me thinking to last year’s Halloween. Last year the holiday snuck up on us, and we did not get around to carving our pumpkins or getting into the spirit until Halloween night! That’s right on Halloween night before trick-or-treating we carved the pumpkins, built a spooky gingerbread haunted house, and enjoyed a few Halloween treats. Part of that was due to our busy lives, and part of it was due to being a blended family and having varying schedules. Well, this year I decided that we would start celebrating early and enjoy a bit of Halloween throughout the month. The kids think this idea is brilliant!

Just Batty OREO

I headed to Walmart and picked up some plastic skull goblets, crazy straws, and a few treats. My kids simple love OREOs and cheesecake – So I decided to make them OREO N0-Bake Cheesecake and let them enjoy Fanta Brain Freeze Orange Floats. The dark OREOs and orange Fanta fits the Halloween theme perfectly!

The OREO cheesecakes are quick to put together, and since I make them in cupcake liners they are easy to dole out. The Fanta Brain Freezes are simply an orange float – two scoops of orange sherbet topped with Fanta! Making both the Batty OREO No-Bake Cheesecake and Fanta Brain Freezes together makes it a celebration!

Makes 12 Individual Cheesecakes

Batty OREO No-Bake Cheesecake Recipe

Ingredients

  • 25 OREO cookies, divided
  • 1/8 cup butter, melted
  • 2 packages (8 oz, each) cream cheese, softened
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 4 oz. whipped topping, thawed

Directions

  1. Place 12 OREO cookies into a resealable plastic bag and finely crush. Pour into a small bowl and mix with melted butter. Press cookie/butter mixture into the bottom of 12 cupcake liners (using a cupcake tin).
  2. Beat cream cheese, sugar, and vanilla in large bowl with wire whip until well blended.
  3. Meanwhile coarsely chop remaining 13 OREOs.
  4. Gently fold thawed whipped topping and chopped OREOs into cream cheese mixture.Batty OREO No-Bake Cheesecake Recipe
  5. Spoon over crust – pushing down into cupcake liners with the back of the spoon.
  6. Refrigerate 2 hours or until firm.Batty OREO No-Bake Cheesecake Recipe

To make the bats, I simply scraped a bit of OREO filling and used it to attach the sugar eyes (that I had in my baking cabinet, but can be found in most grocery store baking aisles) to the OREO cookie. I cut wings out of black construction paper and slipped them into the cookie filling. Fast and easy!Batty OREO No-Bake Cheesecake Recipe

To make the Fanta Brain Freeze Floats simply pour Fanta over two scoops of orange sherbet. Add silly straw and enjoy!
