Healthy and Quick Food for All

Healthy and quick food is not always readily available everywhere.  As a busy working mother, I know how hard it can be at times.As you may have noticed, I have not posted in more than a few days. With the end of the school year right around the corner, my life has gotten even busier than normal. Is that even possible? Nine more teaching days means end of year activities, final assessments, report cards, sorting, cleaning, and organizing.  Plus I was very lucky to have all six kids home last weekend to celebrate my daughter’s college graduation. It is a very busy time right now!

When life gets this busy I can put my blog on a back burner, but I cannot let go of feeding my family.  Food and eating healthy cannot be put aside – my family needs food.  I am lucky in that of the four kids in the house right now, my daughter loves to cook and try new recipes.  She loves it all the more when I pay for the grocery shopping 🙂

Last night she made us a great meal of vegan “tacos”.  The taco filling was made from roasted sweet potatoes and chopped walnuts.  I am sure she will be posting the recipe on her blog, Eating Right With Every Bite, soon.

While I live in an area where I can purchase lots of fresh, healthy, and organic food, not all neighborhoods are so lucky.  My daughter recently wrote an article on two people that noticed how one neighborhood was lacking in avaialbe healthy food.  They changed that!
