Caprese Salad

I was so excited to come home from work and find this package! We recieved our second shipment from our adopted olive tree through Nudo. This olive oil is delicious! My husband and I received this as a wedding gift, and you can read all about this wonderful company in an earlier post called, Owning a Little Bit of Italy.

One of the recipes my family enjoys with this olive oil is Caprese Salad. Farm fresh tomatoes sliced and layered with fresh mozzarella, leaves of basil, drizzled with olive oil and balsamic vinegar, and a touch of salt and pepper. OK, if you know me, you know that I am not a huge fan of fresh tomatoes. But my family LOVES them. I have tried and tried and tried. It really is a texture thing – as I love bruchetta, salsa, and tomato sauces. I also love the color red! I mean it when I look at fresh cut tomatoes and say how beautiful it all looks!Caprese salads are easy to put together, absolutely delicious (for the tomato lovers), and oh-so beautiful! I love all the colors of this salad! My family can never seem to get enough!

Caprese Salad

INGREDIENTSFresh Tomatoes
Fresh Mozzarella
Fresh Basil Leafs
Olive Oil
Balsamic Vinegar
Pinch of Salt and PepperDIRECTIONSCut the tomatoes into thick slices
Cut the fresh mozzarella into thick slices
Layer the tomatoes, mozzarella, and fresh basil alternating as you go.
Drizzle olive oil and balsamic vinegar over all of the salad.
Sprinkle a pinch of salt and pepper over all.
Look at the beautiful salad you just created and enjoy!

Another wonderful aspect of Caprese Salad is it is delicious on its own as an entree, as a side to beef or pasta, or as a beautiful appetizer.  It is always a show stopper when it is served to guest. Serve a platter like this one and watch your guests drool!

A friend in Italy tells me that olive oil is also a great conditioner for hair and skin.  I don’t think I will be using my Nudo for conditioner – but maybe I will try my big Costco can of olive oil for that. Maybe 🙂
